Gelato Preparation

    Prepare the Custard Base

    In a saucepan, combine the whole milk, heavy cream, and half of the granulated sugar. Heat over medium heat until the mixture is warm but not boiling.

    Whisk Egg Yolks

    In a separate bowl, whisk together the egg yolks and the remaining granulated sugar until the mixture becomes pale and thick.

    Combine Mixtures

    Slowly pour the warm milk mixture into the egg yolk mixture while whisking continuously to temper the eggs.

    Cook the Custard

    Return the combined mixture to the saucepan and cook over medium heat, stirring constantly until it thickens enough to coat the back of a spoon. Do not let it boil.

    Add Vanilla and Salt

    Remove the custard from heat and stir in vanilla extract and salt. Let it cool completely in the refrigerator.

Flavoring and Freezing

    Divide and Flavor the Base

    Once the custard base is cool, divide it evenly into three bowls.

    Flavor the First Gelato

    In the first bowl, mix in the chocolate syrup until well combined.

    Flavor the Second Gelato

    In the second bowl, add the chopped pistachios and green food coloring, stirring until the mixture is uniformly green.

    Flavor the Third Gelato

    In the third bowl, mix in the chopped maraschino cherries and almond extract.

    Chill and Freeze

    Transfer each flavored gelato into separate containers and freeze for about 4 hours or until firm.

Assembly

    Swirl the Flavors

    Once the gelatos are firm, scoop portions of each flavor and swirl them together in a serving dish or a loaf pan.

    Final Freeze

    Return the assembled spumoni to the freezer for an additional 1 hour to firm up the swirls.
