Dough Preparation

Make the Dough

In a large mixing bowl, combine the flour and salt. Create a well in the center and add the eggs and olive oil. Mix until a rough dough forms.

Knead the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare Spinach

In a large pan over medium heat, sauté the minced garlic in a little olive oil until fragrant. Add the spinach and cook until wilted. Remove from heat and let it cool.

Make the Filling

In a mixing bowl, combine the cooked spinach, ricotta cheese, parmesan cheese, nutmeg, salt, and pepper. Mix until well combined.

Roll Out the Dough

Divide the rested dough into quarters. Roll out one quarter at a time into a thin sheet using a pasta machine or rolling pin.

Place small mounds of filling (about 1 teaspoon each) on one half of the dough sheet. Fold the other half over the filling and press down to seal. Cut between the mounds to create individual ravioli.
