Method
Dough Preparation
Make the Dough
In a large mixing bowl, combine the flour and salt. Create a well in the center and add the eggs and olive oil. Mix until a rough dough forms.
Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.
Filling Preparation
Make the Filling
In a mixing bowl, combine the cooked spinach, ricotta cheese, parmesan cheese, nutmeg, salt, and pepper. Mix until well combined.
Ravioli Assembly
Roll Out the Dough
Divide the rested dough into quarters. Roll out one quarter at a time into a thin sheet using a pasta machine or rolling pin.
Form Ravioli
Place small mounds of filling (about 1 teaspoon each) on one half of the dough sheet. Fold the other half over the filling and press down to seal. Cut between the mounds to create individual ravioli.
Cooking and Serving
Cook the Ravioli
Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for about 3-4 minutes or until they float to the surface.
Prepare the Sauce
In a large skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant. Add fresh basil, salt, and pepper.
Serve
Toss the cooked ravioli in the sauce until well coated. Serve hot, garnished with additional parmesan cheese if desired.
