Mixing

    Prepare the Glass

    Begin by chilling a rocks glass. To do this, fill the glass with ice water and set it aside while you prepare the drink.

    Rinse with Absinthe

    Once the glass is chilled, discard the ice water. Add 0.5 oz of absinthe to the glass and swirl it around to coat the inside. Discard any excess absinthe.

    Muddle the Sugar

    In a mixing glass, place the sugar cube and add a few dashes of Peychaud bitters over it. Muddle them together until the sugar is dissolved.

    Add Whiskey

    Pour 2 oz of Sazerac Rye Whiskey into the mixing glass with the muddled sugar and bitters mixture.

    Add Ice and Stir

    Fill the mixing glass with ice and stir the mixture for about 30 seconds until well chilled.

    Strain into Glass

    Using a strainer, pour the chilled whiskey mixture into the prepared glass, ensuring not to disturb the absinthe rinse.

    Garnish

    Express the oils from a lemon peel strip over the drink by holding it over the glass and giving it a twist. Optionally, drop the peel into the drink for garnish.
