Method
Crust Preparation
- 1
Preheat Oven
Preheat your oven to 325°F (160°C).
- 2
Prepare the Crust
In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and crumbly.
- 3
Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in the preheated oven for about 10 minutes. Remove from the oven and let cool.
Filling Preparation
- 4
Mix Cream Cheese
In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- 5
Add Sugar and Sour Cream
Gradually add the granulated sugar and sour cream to the cream cheese, mixing until well combined.
- 6
Add Vanilla and Eggs
Mix in the vanilla extract. Add the eggs one at a time, mixing well after each addition until the batter is smooth.
- 7
Pour Filling into Crust
Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.
- 8
Bake the Cheesecake
Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.
Topping Preparation
- 9
Prepare the Berries
In a bowl, toss the strawberries or blueberries with granulated sugar and lemon juice. Let sit for about 10 minutes to allow the juices to develop.
- 10
Top the Cheesecake
Once the cheesecake has cooled, remove it from the springform pan. Top with the prepared berries just before serving.
