Method

Making the Gnocchi

Prepare the Potatoes

Wash and scrub the Russet potatoes thoroughly. Place them in a large pot and cover with water. Bring to a boil and cook until fork-tender, about 30-40 minutes.

Mash the Potatoes

Once cooked, drain the potatoes and allow them to cool slightly. Peel the skins and mash the potatoes using a potato masher or ricer until smooth. Let cool completely.

Make the Dough

In a large mixing bowl, combine the cooled mashed potatoes, flour, egg, and salt. Mix gently until a soft dough forms; avoid overworking to keep the gnocchi tender.

Shape the Gnocchi

Divide the dough into four equal portions. Roll each portion into a long rope about 1/2 inch thick. Cut into 1-inch pieces and use a fork to create ridges on each piece (optional).

Cook the Gnocchi

Bring a large pot of salted water to a boil. Gently drop the gnocchi into the boiling water. Cook until they float to the surface, about 2-3 minutes. Remove them with a slotted spoon and set aside.
