Preparing the Pasta

Cook the Manicotti

Bring a large pot of salted water to a boil. Add the manicotti pasta and cook for 6-8 minutes until al dente. Drain and rinse with cold water to stop cooking. Set aside.

Prepare the Cheese Mixture

In a mixing bowl, combine ricotta cheese, 1 cup of mozzarella cheese, parmesan cheese, egg, chopped parsley, salt, and black pepper. Mix well until all ingredients are fully incorporated.

Prepare the Marinara Sauce

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in marinara sauce, crushed red pepper flakes, and dried oregano. Bring to a simmer and cook for 10 minutes.

Assembling the Manicotti

Fill and Arrange

Preheat your oven to 375°F (190°C). Using a piping bag or a spoon, fill each manicotti shell with the cheese filling. Spread 1 cup of marinara sauce on the bottom of a baking dish. Arrange the filled manicotti in the dish, and cover with the remaining marinara sauce. Sprinkle the remaining mozzarella cheese on top.

Bake the Manicotti

Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
