Method

Preparation of Salmon

  1. 1

    Marinate the Salmon

In a small bowl, mix together olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Make sure the salmon is well coated. Allow it to marinate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (around 375°F to 400°F or 190°C to 200°C).

Grilling the Salmon

  1. 3

    Grill the Salmon

Once the grill is hot, place the marinated salmon fillets skin-side down on the grill. Close the lid and grill for about 6-8 minutes per side, or until the salmon flakes easily with a fork and has nice grill marks.

  2. 4

    Rest the Salmon

Remove the salmon from the grill and let it rest for a few minutes before serving.

Preparation of Vegetables

  1. 5

    Prepare the Vegetables

While the salmon is marinating, wash and cut the asparagus, bell peppers, and zucchini into bite-sized pieces.

  2. 6

    Season the Vegetables

In a large bowl, toss the prepared vegetables with olive oil, salt, and black pepper.

Grilling the Vegetables

  1. 7

    Grill the Vegetables

Place the seasoned vegetables on the grill alongside the salmon. Grill for about 5-7 minutes, turning occasionally until they are tender and have grill marks.

Serving

  1. 8

    Plate the Dish

Serve the grilled salmon on a plate alongside the grilled seasonal vegetables. You can garnish with additional lemon wedges if desired.
