Cooking the Pasta

Boil the Water

In a large pot, bring 4-6 cups of salted water to a boil.

Cook the Fusilli

Once the water is boiling, add 2 cups of fusilli pasta. Stir occasionally to prevent sticking and cook for 8-10 minutes or until al dente.

Drain the Pasta

Once cooked, drain the pasta in a colander and set aside, saving a cup of the pasta water.

Preparing the Sauce

Sauté the Garlic

In the same pot, heat 2 tablespoons of olive oil over medium heat. Add 3 cloves of minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Add the Cherry Tomatoes

Add 2 cups of halved cherry tomatoes to the pot and cook for 5-7 minutes until they start to soften.

Combine with Pasta

Add the drained fusilli pasta back into the pot with the tomato and garlic mixture. Stir to combine.

Add Basil and Cheese

Stir in 1 cup of chopped fresh basil and 0.5 cups of grated Parmesan cheese. If the pasta seems dry, add a little reserved pasta water until the desired consistency is reached.

Season and Serve

Season with black pepper to taste and serve immediately, garnished with extra Parmesan if desired.
