Method
Cake Layers
- 1
Prepare the Oven and Pans
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- 2
Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
- 3
- 4
Combine Wet and Dry Ingredients
Gradually add the wet mixture to the dry ingredients, stirring until just combined. Finally, stir in the boiling water until the batter is smooth.
- 5
Bake the Cake Layers
Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Chocolate Ganache Filling
- 6
Heat the Cream
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
- 7
Combine with Chocolate
Remove from heat and pour the hot cream over the chocolate chips in a heat-proof bowl. Let it sit for 5 minutes, then stir until smooth and glossy.
- 8
Cool the Ganache
Allow the ganache to cool to room temperature before using it as a filling.
Fondant
- 9
Melt the Marshmallows
In a microwave-safe bowl, combine the marshmallows and water. Microwave for 30 seconds, stir, and repeat until the marshmallows are melted and smooth.
- 10
- 11
Roll Out the Fondant
Roll out the fondant to a thickness of about 1/4 inch to cover the cake.
Assemble and Decorate
- 12
Layer the Cake
Once the cake layers are completely cool, place one layer on a serving plate. Spread a layer of chocolate ganache on top, then place the second layer on top.
- 13
Cover with Fondant
Carefully drape the rolled fondant over the cake, smoothing it out with your hands to eliminate any air bubbles.
- 14
Decorate (optional)
If desired, use edible gold dust and chocolate shavings to decorate the top of the cake.
