Cake Preparation

Preheat the Oven
Preheat your oven to 425°F (220°C).

Melt Butter and Chocolate
In a microwave-safe bowl, combine the unsalted butter and bittersweet chocolate. Microwave in 30-second intervals, stirring in between, until melted and smooth.

Combine Sugar and Eggs
In a large mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is thick and pale.

Incorporate the Chocolate Mixture
Gradually add the melted chocolate mixture to the egg mixture, stirring constantly to combine.

Add Vanilla, Flour, and Salt
Stir in the vanilla extract, all-purpose flour, and a pinch of salt until just combined. Be careful not to overmix.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Bake
Place the ramekins on a baking sheet and bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is still soft.

Remove from the oven and let the cakes cool for 1 minute. Invert each ramekin onto a plate and gently tap to release the cake. Serve immediately with a scoop of vanilla gelato on the side.
