Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Whisk together until fully combined.

Incorporate Butter
Add the unsalted butter to the dry ingredients and mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs.

Knead the Dough
Turn the dough out onto a floured surface and knead for about 5 minutes, until smooth. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Roll Out the Dough
After chilling, roll out the dough on a lightly floured surface until thin (about 1/8 inch). Cut into circles, approximately 4 inches in diameter.

Wrap each circle of dough around a cannoli tube, sealing the edges with egg white.

Fry the Shells
In a large pot or deep fryer, heat the oil to 375°F (190°C). Fry the cannoli shells until golden brown, about 2-3 minutes. Remove and let cool on paper towels.

In a mixing bowl, combine the ricotta cheese, powdered sugar, vanilla extract, and cinnamon (if using). Mix well until smooth.

Fold in the chocolate chips gently until evenly distributed throughout the ricotta mixture.

Using a piping bag or a small spoon, fill each cooled cannoli shell with the ricotta filling. Ensure they are filled generously.
