For the Calamari

Preparing the Marinara Sauce

    Heat Olive Oil

    In a medium saucepan, heat the olive oil over medium heat.

    Sauté Garlic

    Add the minced garlic to the saucepan and sauté for about 1 minute until fragrant, being careful not to burn it.

    Add Tomatoes and Spices

    Pour in the canned crushed tomatoes and add oregano, basil, salt, black pepper, red pepper flakes, and sugar. Stir to combine.

    Simmer Sauce

    Reduce heat to low and let the sauce simmer for about 20 minutes, stirring occasionally.

    Adjust Seasoning

    Taste the sauce and adjust seasoning if necessary. Remove from heat and set aside.

Preparing the Calamari

    Prepare the Coating

    In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder until well combined.

    Heat Oil

    In a deep skillet or frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Calamari

    Dredge the calamari rings in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.

    Fry the Calamari

    Carefully place the coated calamari rings in the hot oil in batches, frying for 2-3 minutes or until golden brown. Do not overcrowd the pan.

    Drain and Serve

    Using a slotted spoon, remove the fried calamari and place them on a plate lined with paper towels to drain excess oil. Serve hot with the marinara sauce.
