    Prepare the Spaghetti Squash

    Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, and season with salt and pepper. Place the halves cut-side down on a baking sheet and roast for about 30-40 minutes, or until tender.

    Cook the Sausage

    In a large skillet over medium heat, add the Italian sausage. Cook until browned and cooked through, breaking it up with a spoon, about 8-10 minutes.

    Sauté Vegetables

    Add minced garlic and spinach to the skillet with the sausage. Cook until the spinach wilts, about 2-3 minutes.

    Combine Ingredients

    Stir in the Tuscan beans and heavy cream. Cook for another 3-5 minutes, allowing the mixture to thicken. Season with salt and pepper to taste.

    Stuff the Squash

    Once the spaghetti squash is done roasting, use a fork to scrape the flesh into strands. Mix it with the sausage and bean mixture. Fill the squash halves with the stuffing.

    Finish and Serve

    Sprinkle grated Parmesan cheese on top of the stuffed squash. Return to the oven for an additional 10 minutes, or until the cheese is melted and bubbly. Serve warm.
