Roasting the Beets
Preheat your oven to 400°F (200°C). Wash and trim the tops and tails of the organic beets. Wrap each beet individually in aluminum foil, drizzle with olive oil, and sprinkle with salt and black pepper. Place them on a baking sheet and roast for about 45-60 minutes, or until tender when pierced with a fork.

Making the Dressing
In a small bowl, whisk together balsamic vinegar, Dijon mustard, honey, minced garlic, and chopped parsley until well combined.

Combining and Serving
Once the beets are done roasting, allow them to cool slightly. Peel the skin off (it should come off easily) and slice into wedges. Drizzle the tangy dressing over the warm beets and serve.
