Ingredients for Parmigiano di Pollo
Method
Directions for Preparing Parmigiano di Pollo
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). Place each chicken breast between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
- 2
Season and Bread the Chicken
Season both sides of each chicken breast with salt and black pepper. Set up a breading station: Place flour in one dish, beaten eggs in another, and bread crumbs mixed with grated Parmesan cheese in a third dish. Dredge each chicken breast in flour, dip in eggs, and finally coat with the bread crumb mixture.
- 3
Cook the Chicken
In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through. Transfer the cooked chicken to a baking dish.
- 4
Add Marinara and Cheese
Pour marinara sauce evenly over the chicken cutlets. Sprinkle additional grated Parmesan cheese on top.
- 5
Bake
Transfer the baking dish to the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and golden.
- 6
Serve
Remove from the oven, garnish with fresh chopped basil if desired, and serve hot.
