Prepare the Filets
Take the filet mignon out of the refrigerator and let them come to room temperature for about 30 minutes. Pat them dry with paper towels.

Seasoning
Rub both sides of the filet mignon with olive oil, salt, and black pepper.

Sear the Filets
Heat a large oven-safe skillet over medium-high heat. Once hot, add the filet mignon and sear for about 3-4 minutes on each side until a golden-brown crust forms.

Add Aromatics
Add the garlic cloves and rosemary to the skillet, then add butter and allow it to melt. Spoon the melted butter over the filets while they cook.

Finish in the Oven
Transfer the skillet to a preheated oven at 400°F (200°C) and roast for an additional 5-7 minutes for medium-rare, or until your desired doneness.

Rest and Serve
Remove the skillet from the oven, transfer the filets to a plate, and let them rest for 5 minutes before serving.
