Making the Filling
In a mixing bowl, combine lobster meat, ricotta cheese, Parmesan cheese, egg, parsley, salt, and black pepper. Mix until well blended and set aside.

Rolling Out the Dough
After resting, divide the dough into four pieces. Roll out each piece as thin as possible, using a pasta machine or rolling pin.

Forming the Ravioli
Place teaspoons of filling about 2 inches apart on one sheet of rolled dough. Moisten the edges with water, and fold the dough over to form pockets. Press to seal and cut out individual ravioli.

Cooking the Ravioli
Bring a large pot of salted water to a boil. Cook ravioli in batches for about 4-5 minutes or until they float to the surface. Remove with a slotted spoon.

Making the Sauce
In a skillet, melt butter over medium heat. Add garlic and sauté until fragrant. Stir in heavy cream and lemon juice, simmer for 2-3 minutes.

Combining and Serving
Add the cooked ravioli to the sauce, gently tossing to coat. Serve immediately, garnished with additional parsley and grated Parmesan if desired.
