Make the Pasta Dough
In a large bowl, combine the flour and salt. Create a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs until a dough forms. Knead on a floured surface for about 10 minutes until smooth and elastic. Wrap in plastic wrap and let rest for 30 minutes.

Prepare the Filling
In a bowl, combine ricotta cheese, Parmesan cheese, cooked spinach, nutmeg, salt, and pepper. Mix until well combined.

Roll Out the Dough
After resting, divide the dough into four portions. Roll out each portion into thin sheets using a pasta machine or a rolling pin, dusting with flour as needed. The sheets should be about 1/16 inch thick.

Assemble the Ravioli
Cut the dough sheets into rectangles (about 3x4 inches). Place a tablespoon of filling in the center of half of the rectangles. Moisten the edges with water, then fold over the dough to seal. Press out any air pockets and crimp the edges with a fork.

Cook the Ravioli
Bring a large pot of salted water to a boil. Add ravioli and cook for about 4-5 minutes until they float to the surface. Remove with a slotted spoon.

Serve
Toss the cooked ravioli in the sauce until well coated. Serve immediately, garnished with additional Parmesan cheese if desired.
