    Prepare the Broth

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, red bell pepper, and fennel. Sauté until the vegetables are softened, about 5 minutes.

    Add Tomatoes and Spices

    Stir in the canned diced tomatoes, fish stock, white wine, bay leaves, oregano, red pepper flakes, salt, and black pepper. Bring to a simmer and cook for 15 minutes to let the flavors meld.

    Add Seafood

    Gently add the scallops, prawns, mussels, clams, and lobster tail to the pot. Cover and simmer for an additional 10-15 minutes, or until the seafood is cooked through and the mussels and clams have opened.

    Serve

    Remove from heat, discard the bay leaves, and adjust seasoning if necessary. Serve hot with garlic crostini on the side.
