    Prepare the Vegetables

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Then add sliced zucchini and mushrooms, cooking until softened, about 5-7 minutes. Stir in spinach and cook until wilted. Season with salt and pepper. Remove from heat.

    Prepare the Lasagna Layers

    Preheat the oven to 375°F (190°C). In a baking dish, spread a layer of marinara sauce on the bottom. Lay down three lasagna noodles, followed by a third of the ricotta cheese, a third of the vegetable mixture, a third of the béchamel sauce, and a sprinkle of Parmesan and mozzarella cheese.

    Repeat the Layers

    Repeat the layering process two more times, finishing with noodles topped with marinara sauce, remaining béchamel, and a generous layer of mozzarella and Parmesan cheese.

    Bake the Lasagna

    Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes or until the cheese is bubbly and golden.

    Once baked, allow the lasagna to cool for 10-15 minutes before slicing. Serve warm.
