Cooking Instructions

  1. 1

    Marinate the Salmon

In a bowl, combine olive oil, minced garlic, oregano, orange juice, salt, and black pepper. Add the salmon fillets and coat well. Cover and marinate for at least 30 minutes.

  2. 2

    Prepare the Pasta

In a large pot of boiling salted water, cook the angel hair pasta according to package instructions until al dente. Drain and set aside.

  3. 3

    Cook the Spinach

In a large skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant. Add spinach and sauté until wilted. Season with salt and pepper.

  4. 4

    Grill the Salmon

Preheat the grill to medium-high. Remove the salmon from the marinade and grill for about 4-5 minutes on each side or until cooked through and flaky.

  5. 5

    Prepare the Marinara Sauce

In a saucepan, heat the marinara sauce over medium heat until warmed through.

  6. 6

    Serve

On each plate, place a bed of sautéed spinach, top with grilled salmon, and serve with angel hair pasta drizzled with marinara sauce.
