Cooking Instructions
- 1
Cook the Fettuccine
In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
- 2
Sauté Aromatics
In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat. Add minced garlic and chopped shallots, sautéing until they are translucent and fragrant, about 2-3 minutes.
- 3
Add Shrimp and Wine
Increase the heat to medium-high and add the shrimp to the skillet. Cook for 2-3 minutes until they start turning pink. Pour in the white wine and let it simmer for about 5 minutes until it's reduced slightly.
- 4
Incorporate Tomatoes and Finish Sauce
Add the diced tomatoes to the skillet, stir and cook for an additional 2 minutes. Add the remaining butter, season with salt and black pepper to taste, and stir until the butter melts into the sauce.
- 5
Combine with Pasta
Add the cooked fettuccine to the skillet, tossing gently to coat the pasta in the sauce. If the sauce is too thick, add a little reserved pasta water to achieve the desired consistency.
- 6
Serve
Remove from heat, sprinkle with fresh parsley, and serve immediately.
