Eggplant, Fig Jam, Manchego, Chili Oil, Basil, Spiced Honey

Preheat your oven to 400°F (200°C). Slice the eggplant into 1/2 inch thick rounds and place them on a baking sheet. Drizzle with 1 tablespoon of chili oil and sprinkle with salt. Bake for 20-25 minutes until golden and tender, flipping halfway through.

Prepare the Eggplant

Once the eggplant is cooked, remove it from the oven and let it cool slightly. Spread a layer of fig jam over each eggplant slice. Top with thin slices of manchego cheese.

Assemble the Dish

Drizzle the remaining chili oil over the assembled eggplant slices. Add a drizzle of spiced honey on top for sweetness and garnish with fresh basil leaves.
