Prepare the Prime Rib
Preheat your oven to 450°F (230°C). Season the prime rib generously with salt and black pepper. Place it in a roasting pan and roast for 20 minutes.

Reduce oven temperature
After 20 minutes, reduce the oven temperature to 325°F (160°C) and continue to roast for about 1 hour and 15 minutes for medium-rare, or until it reaches your desired doneness.

Rest the meat
Once done, remove the prime rib from the oven and let it rest for at least 20 minutes before slicing.

Make Pommes Purée
Peel and chop potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot. Add butter and heavy cream, then mash until smooth.

Prepare Seasonal Vegetables
Steam or sauté seasonal vegetables until tender but still crisp, about 5-7 minutes.

Make Sauce Diane
In a saucepan, melt butter and sauté minced garlic until fragrant. Add Dijon mustard, Worcestershire sauce, and beef stock. Simmer until slightly thickened, about 10 minutes.

Prepare Horseradish Cream
In a bowl, combine horseradish and sour cream. Mix well and adjust seasoning to taste.

Serve
Slice the prime rib and serve with pommes purée, seasonal vegetables, sauce Diane, and horseradish cream on the side.
