Prepare the Garlic Herb Butter
In a mixing bowl, combine the softened unsalted butter, minced garlic, chopped parsley, chopped thyme, Pernod, salt, and black pepper. Mix well until all ingredients are fully incorporated.

Prepare the Escargot
If using canned escargot, rinse them under cold water. If using fresh escargot, ensure they are cleaned and cooked according to your preference.

Assemble the Dish
Preheat your oven to 400°F (200°C). Roll out the puff pastry sheets on a floured surface. Cut into squares large enough to wrap around the escargot. Place a tablespoon of the garlic herb butter mixture in the center of each square, add an escargot on top, and then fold the pastry over the filling, sealing the edges with a fork.

Bake
Place the wrapped escargot on a baking sheet lined with parchment paper. Brush the tops with the beaten egg to give them a golden color. Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown.

Remove from the oven and let cool slightly before serving. Enjoy warm as an appetizer!
