Prep the Potatoes
Peel the Russet potatoes and cut them into thin strips (about 1/4 inch thick). Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove as much moisture as possible.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 325°F (163°C).

First Fry
Carefully add the potato strips to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 4-5 minutes until they are soft but not browned. Remove and drain on paper towels.

Increase Oil Temperature
Increase the oil temperature to 375°F (190°C).

Second Fry
Return the pre-fried potatoes to the hot oil in batches and fry for another 2-3 minutes until golden brown and crispy. Remove and drain on paper towels.

While the fries are still hot, sprinkle with salt to taste. Serve immediately with your favorite dipping sauce.
