    Prepare the Potatoes

    Boil the marble potatoes in salted water until tender, about 15-20 minutes, then drain and set aside.

    Prepare the Haricot Verts

    In the same pot, blanch the haricot verts in boiling water for about 3-4 minutes until bright green. Drain and set aside.

    Prepare the Tomatoes and Olives

    Chop the tomatoes and slice the green olives.

Cooking

    Cook the Sea Bass

    Preheat the oven to 200°C (400°F). In a baking dish, drizzle 2 tablespoons of olive oil. Place the sea bass in the dish, season with salt and pepper, and drizzle with lemon juice.

    Add Vegetables

    Scatter the boiled potatoes, haricot verts, chopped tomatoes, sliced olives, and minced garlic around the fish in the baking dish.

    Bake

    Drizzle the remaining olive oil over the top and bake in the oven for 20-25 minutes, until the fish is cooked through and flakes easily with a fork.

Serving

    Garnish and Serve

    Remove from the oven, garnish with fresh basil leaves, and serve hot, making sure to include the vegetables and juices from the dish.
