Lobster Bisque Preparation

    Prepare the Lobster

    Boil the lobster tails in salted water for about 8-10 minutes until cooked. Remove the meat and chop it into bite-sized pieces. Reserve the shells.

    Make the Base

    In a large pot, melt the butter over medium heat. Add the shallots and garlic, and sauté until translucent. Stir in the tomato paste and cook for another 2 minutes.

    Add the Stock

    Add the lobster shells to the pot and pour in the fish stock. Bring to a boil, then reduce to a simmer for 30 minutes.

    Blend the Bisque

    Remove the shells and blend the soup until smooth. Return to the pot.

    Finish the Soup

    Stir in the heavy cream, cognac, salt, black pepper, and espelette pepper. Simmer for an additional 10 minutes.

    Serve

    Ladle the bisque into bowls, garnish with lobster meat and chopped parsley. Serve with sourdough crostinis on the side.
