Caramelize the Onions
In a skillet over medium heat, add 1 tablespoon of olive oil. Slice the onions thinly and add them to the skillet. Cook, stirring occasionally, for about 15-20 minutes until they are golden brown and caramelized. Set aside.

Prepare the Garlic Aioli
In a bowl, mix the mayonnaise with minced garlic cloves and a pinch of salt and pepper. Set aside.

Cook the Burger Patties
Form the ground beef into two patties, season with salt and pepper. In the same skillet used for the onions, add the remaining tablespoon of olive oil and cook the patties over medium-high heat for about 4-5 minutes per side for medium doneness. In the last minute of cooking, place cantal cheese on top of each patty to melt.

Prepare Pommes Frites
While the burgers cook, cut potatoes into fries and fry them in hot oil until golden and crispy, about 5-7 minutes. Season with salt.
