Preparation Steps

Prepare the Lemongrass Mousse
In a saucepan, combine the lemongrass stalks with 1 cup of heavy cream and sugar. Bring to a gentle simmer over medium heat, then remove from heat and let it steep for 15 minutes.

Add Gelatin
Soak the gelatin sheets in cold water for 5 minutes until soft. Squeeze out excess water, then add to the warm cream mixture, stirring until dissolved.

Mix in Citrus
Stir in the lemon juice and lemon zest. Allow the mixture to cool slightly.

Whip Cream
In a separate bowl, whip the remaining heavy cream until soft peaks form. Gently fold the whipped cream into the cooled lemongrass mixture until fully combined.

Chill Mousse
Pour the mousse into serving glasses and refrigerate for at least 4 hours or until set.

Prepare White Chocolate
Melt the chopped white chocolate in a microwave or double boiler until smooth. Allow to cool slightly.

Once the mousse is set, spoon some lemon confit on top, drizzle with white chocolate, and garnish with fresh basil leaves.
