    Prepare the onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until the onions are caramelized and golden brown, about 30-40 minutes.

    Add garlic and wine

    Stir in the minced garlic and cook for another 2 minutes. Pour in the dry white wine and simmer until it reduces by half, about 5 minutes.

    Add broth and herbs

    Add the beef broth, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.

    Prepare the baguette

    While the soup is simmering, preheat the oven to 375°F (190°C). Arrange the baguette slices on a baking sheet and toast in the oven until golden brown, about 10 minutes.

    Serve the soup

    Remove the bay leaf from the soup. Ladle the soup into bowls, top each with toasted baguette slices, and sprinkle generously with grated Comté cheese.

    Melt the cheese

    Place the bowls under the broiler for 2-3 minutes or until the cheese is bubbly and golden brown. Serve hot.
