    Prepare the Potatoes

    Peel and cut the potatoes into quarters. Boil in salted water for about 15-20 minutes until tender. Drain and mash with a bit of butter, salt, and pepper to taste.

    Cook the Broccoli

    In a separate pot, steam the broccoli florets for about 5 minutes until bright green and tender-crisp. Set aside.

    Prepare the Steak

    Season the steaks with salt and freshly crushed black peppercorns on both sides.

    Sear the Steaks

    In a large skillet over medium-high heat, add olive oil and 1 tablespoon of butter. Once hot, add the steaks and sear for about 3-4 minutes on each side for medium-rare, or longer if desired. Remove the steaks from the skillet and let them rest.

    Make the Sauce

    In the same skillet, add the minced garlic and cook for about 30 seconds. Pour in the sherry wine and scrape up any browned bits from the bottom of the skillet. Add the bone marrow and remaining butter, stirring until melted and combined. Cook for an additional 2-3 minutes.

    Serve

    Return the steaks to the skillet for a minute to absorb the sauce. Plate the steaks with the mashed potatoes and steamed broccoli, spooning the sauce over the top. Garnish with chopped parsley.
