Directions for Preparing Lightly Cured Ocean Trout

Preparing the Cure
In a bowl, mix together the kosher salt, brown sugar, chopped dill, lemon zest, and lime zest until well combined.

Curing the Trout
Place the ocean trout fillet skin-side down in a shallow dish. Evenly coat the flesh side of the trout with the cure mixture. Cover the dish with plastic wrap and refrigerate for 12-24 hours, depending on your desired level of curing.

Rinse and Slice
After curing, remove the trout from the fridge. Rinse off the cure under cold running water and pat dry with paper towels. Slice the trout thinly on an angle.

Plating
Arrange the sliced cured trout on a serving plate. Scatter the citrus segments over the trout and dollop horseradish cream on top. Garnish with microgreens or sprouts.
