Wash the potatoes thoroughly and cut them into chunks. Boil them in water until tender, about 20 minutes. Drain and let cool.

In a large jar, combine the cooled potato chunks with the caraway, fennel, dill, coriander, juniper, and lemon zest. Pour the neutral grain spirit over the mixture, ensuring the solids are fully submerged. Seal the jar and let it sit in a cool, dark place for 2 weeks.

After 2 weeks, strain the infused spirit through a fine mesh strainer or cheesecloth into a clean bottle. Discard the solids.
