Cooking Instructions

  1. 1

    Prepare the Lamb

Preheat the oven to 180°C (350°F). In a small bowl, mix together olive oil, minced garlic, chopped fresh rosemary, salt, and black pepper. Rub this mixture all over the lamb shoulder.

  2. 2

    Roast the Lamb

Place the seasoned lamb in a roasting pan and roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 60-65°C (140-150°F) for medium-rare. Baste occasionally with the pan juices.

  3. 3

    Prepare the Sunchokes and Mushrooms

While the lamb is roasting, scrub the sunchokes and slice them thinly. Clean the oyster mushrooms and tear them into smaller pieces. In a separate pan, heat 2 tablespoons of olive oil over medium heat. Add the sunchokes and sauté for about 10 minutes until they start to soften.

  4. 4

    Combine and Finish

Add the oyster mushrooms to the pan with sunchokes and sauté for another 5-7 minutes until both are tender. Add lemon juice and season with salt and pepper to taste. Once the lamb is done, let it rest for 10-15 minutes before slicing.

  5. 5

    Serve

Serve the sliced lamb alongside the sautéed sunchokes and oyster mushrooms.
