Gnocchi Preparation

Make the Gnocchi Dough
In a large bowl, combine ricotta, flour, egg, and salt. Mix until a soft dough forms. If the dough is too sticky, add a little more flour.

Shape the Gnocchi
On a floured surface, roll the dough into long ropes, about 1/2 inch thick. Cut into 1-inch pieces and shape with a fork for traditional gnocchi texture.
Cooking the Gnocchi

Boil the Gnocchi
Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
Sausage and Gremolata Preparation

Cook the Sausage
In a large skillet, heat olive oil over medium heat. Remove the sausage from its casing and add it to the skillet. Cook until browned and cooked through, breaking it up with a spoon.

Combine with Gnocchi
Add the cooked gnocchi to the skillet with the sausage. Stir in the mascarpone cheese until combined and heated through.

Make the Gremolata
In a small bowl, mix together chopped parsley, lemon zest, and minced garlic.
Serving

Plate the Dish
Serve the gnocchi mixture on plates and top with gremolata. Enjoy!
