Assembly and Baking

  1. 1

    Prepare the Filling

In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon, leaving the rendered fat in the skillet. Add the diced rabbit meat and cook until browned. Add the onion and garlic, cooking until softened. Stir in the prunes, bone marrow, thyme, salt, and pepper. Cook for an additional 5 minutes, then remove from heat.

  2. 2

    Prepare the Pie Crust

Preheat your oven to 200°C (390°F). Roll out a pie crust on a floured surface to fit a small pie dish. Place the crust into the dish and trim any excess.

  3. 3

    Assemble the Pie

Pour the rabbit filling into the prepared pie crust, spreading it evenly. Cover with a second rolled-out pie crust, sealing the edges. Cut a few slits in the top crust to allow steam to escape.

  4. 4

    Bake the Pie

Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown. Allow to cool for a few minutes before serving.
