Profiterole Preparation

    Make the Dough

    In a saucepan, bring water and butter to a boil. Stir in flour and salt until a ball forms. Remove from heat and let cool slightly. Beat in eggs one at a time until smooth. Pipe small rounds onto a baking sheet.

    Bake the Profiteroles

    Preheat oven to 400°F (200°C). Bake profiteroles for 20-25 minutes until golden and puffed. Let cool before filling.

Parsnip Cream Preparation

    Cook Parsnips

    Boil parsnips until tender. Drain and blend with heavy cream, salt, and pepper until smooth. Set aside.

Apple Component Preparation

    Prepare Apples

    Toss diced apples with lemon juice and sugar. Let sit for 15 minutes.

Smoked Maple Ice Cream Preparation

    Make the Ice Cream Base

    Heat cream and milk in a saucepan. Whisk egg yolks and smoked maple syrup together. Temper the yolks with hot cream mixture, then cook until thickened. Chill and churn in an ice cream maker.

Assembly

    Fill cooled profiteroles with parsnip cream, top with diced apples, and serve with a scoop of smoked maple ice cream.
