    Prepare the Potatoes

    Peel and chop the potatoes into even pieces. Boil in salted water until tender, about 15-20 minutes.

    Mash and Mix

    Drain the potatoes and return them to the pot. Mash until smooth. Stir in butter, heavy cream, egg yolks, salt, pepper, and Parmesan cheese until well combined.

    Incorporate Caramelized Onions

    Gently fold in the caramelized onions into the potato mixture.

    Pipe the Mixture

    Transfer the mixture to a piping bag fitted with a star tip. Pipe small mounds onto a baking sheet lined with parchment paper.

    Bake

    Preheat the oven to 400°F (200°C). Bake the piped potatoes for 20-25 minutes or until golden brown on top.

    Serve warm with béarnaise sauce drizzled on top or on the side.
