Baking Instructions

    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, sugar, baking powder, and salt.

    Combine Wet Ingredients

    In another bowl, whisk together the olive oil, eggs, orange zest, lemon zest, orange juice, and lemon juice.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to over-mix.

    Add Coconut

    Gently fold in the coconut flakes until evenly distributed.

    Bake

    Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

    Cool and Serve

    Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Serve as is or with a dusting of powdered sugar.
