Vegetarian Minestrone Ingredients

Method

Cooking Instructions

  1. 1

    Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes, or until the vegetables are softened.

  2. 2

    Add Remaining Vegetables

Stir in the zucchini, yellow squash, and green beans. Cook for an additional 5 minutes, stirring occasionally.

  3. 3

    Add Tomatoes and Broth

Add the canned diced tomatoes (with their juices) and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for about 10 minutes.

  4. 4

    Cook Pasta

Add the pasta to the pot and cook according to package instructions until al dente, about 8-10 minutes.

  5. 5

    Add Basil and Season

Stir in the chopped basil and grated Parmesan cheese. Season with salt and black pepper to taste. Cook for an additional 2-3 minutes until heated through.

  6. 6

    Serve

Ladle the minestrone into bowls and garnish with extra Parmesan and basil if desired. Enjoy your vegetarian minestrone!
