    Prepare the Puff Pastry

    Preheat your oven to 400°F (200°C). Roll out the puff pastry sheets to about 1/8 inch thick and cut into rectangles. Place the pastry on a baking sheet lined with parchment paper, and prick with a fork to prevent puffing. Bake for 15-20 minutes or until golden brown. Let cool completely.

    Make the Honey Cream

    In a medium bowl, whip the heavy cream until soft peaks form. Gradually add the honey while continuing to whip until stiff peaks form. Stir in the bourbon and vanilla extract until well combined.

    Prepare the Buckwheat Sauce

    In a small saucepan, combine the buckwheat flour, granulated sugar, salt, and 1 cup of water. Cook over medium heat, stirring constantly until thickened. Remove from heat and let cool.

    Assemble the Mille-feuille

    On a serving plate, layer one puff pastry sheet, spread a layer of honey cream, followed by a drizzle of the buckwheat sauce. Repeat the layers, finishing with a puff pastry sheet on top. Dust with powdered sugar if desired.

    Chill the assembled mille-feuille for at least 30 minutes before slicing into portions and serving.
