Lobster Stock

Method

Prepare the Lobster Stock

  1. 1

    Sauté the Vegetables

In a large pot, heat olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté until softened, about 5 minutes.

  2. 2

    Add Lobster Shells

Add the lobster shells and smashed garlic to the pot. Cook for another 5 minutes until shells are fragrant.

  3. 3

    Add Water and Herbs

Pour in the water, add thyme, bay leaves, and bring to a boil. Reduce heat and simmer for 30 minutes.

  4. 4

    Strain the Stock

Strain the stock through a fine-mesh sieve to remove solids. Set aside.

Prepare the Lobster Cream

  1. 5

    Heat the Cream

In a saucepan, combine the heavy cream and lobster meat. Heat gently until warmed through.

  2. 6

    Blend the Mixture

Using an immersion blender, blend the cream mixture until smooth. Season with salt, white pepper, and lemon juice.

Assemble and Serve

  1. 7

    Combine Stock and Cream

In a bowl, mix the lobster stock with the lobster cream, whisking until combined.

  2. 8

    Serve

Pour the mixture into espresso cups, sprinkle with chopped chives and paprika for garnish. Serve immediately.
