Method

Preparing the Fennel

    Sauté the Fennel

    In a skillet, heat olive oil over medium heat. Add the sliced fennel, salt, and black pepper. Sauté until tender and slightly caramelized, about 10 minutes. Set aside.

Making the Sauce Messine

    Prepare the Sauce

    In the same skillet, melt butter over medium heat. Add minced shallots and sauté until translucent, about 3 minutes. Pour in white wine, and let it reduce by half. Stir in heavy cream and lemon juice, and cook until thickened, about 5-7 minutes. Season with salt and black pepper to taste.

Cooking the Halibut

    Cook the Halibut

    Preheat the oven to 375°F (190°C). Season halibut fillets with salt and pepper. Place them in a baking dish and top with sautéed fennel. Bake in the oven for 15-20 minutes or until the fish is cooked through and flakes easily with a fork.

Serving

    Plate the Dish

    On a serving plate, place the halibut topped with fennel. Drizzle with Sauce Messine and garnish with chopped chervil. Serve immediately.
