Preparation and Cooking

    Prepare the Pork Rack

    Preheat your oven to 400°F (200°C). Season the pork rack with salt and black pepper. Rub olive oil all over the pork.

    Cook the Pork Rack

    Place the pork rack in a roasting pan and roast in the preheated oven for about 25-30 minutes or until the internal temperature reaches 145°F (63°C). Remove from the oven and let it rest for 10 minutes before slicing.

    Macerate the Berries

    In a medium bowl, combine the mixed berries, honey, and balsamic vinegar. Toss gently and let sit for at least 10 minutes to allow the flavors to meld.

    Assemble the Salad

    In a large bowl, combine the farm greens, goat cheese, and walnuts. Drizzle with a little olive oil and toss gently.

    Slice the pork rack and serve it alongside the macerated berries and the salad of farm greens.
