Duck Confit Preparation

    Prepare the Duck

    Rub the duck legs with salt, crushed garlic, and thyme. Cover and refrigerate for at least 24 hours.

    Cook the Duck

    Preheat your oven to 225°F (107°C). Rinse the duck legs to remove excess salt and pat dry. In a large oven-safe pot or Dutch oven, cover the duck legs with duck fat and cook in the oven for about 2-3 hours until tender.

    Make the Berry Sauce

    In a saucepan over medium heat, combine the mixed berries, honey, and lemon juice. Cook for about 10-15 minutes until the berries break down and the sauce thickens slightly.

    Plate the Dish

    Remove the duck legs from the fat and let them drain on paper towels. Serve the duck on a bed of red leaf lettuce, drizzle with berry sauce, and sprinkle with dried lavender.
