Prepare Duck Foie Gras

    Season the Foie Gras

    In a bowl, combine duck foie gras with salt, pepper, and cognac. Mix gently to ensure even seasoning. Let it marinate in the refrigerator for at least 30 minutes.

    Cook the Foie Gras

    Preheat a skillet over medium heat. Sear the foie gras slices for about 1-2 minutes on each side until golden brown. Remove and let rest.

Make Apricot Compote

    Cook the Apricots

    In a small saucepan, combine dried apricots, water, sugar, and lemon juice. Bring to a boil, then reduce heat and simmer for 10-15 minutes until apricots are soft. Blend until smooth if desired.

Prepare Buckwheat Biscuit

    In a bowl, cream together the butter and sugar until light and fluffy. Beat in the egg. In a separate bowl, combine buckwheat flour and baking powder. Gradually add the dry ingredients to the butter mixture, alternating with milk.
