Preparation

    Soak the Beans

    Soak the flageolet beans in water overnight. Drain before using.

    Prepare the Meats

    In a large pot, render the bacon over medium heat until crispy. Remove and set aside. Brown the duck legs in the bacon fat on all sides, then remove and set aside. Brown the sausages in the same pot and slice them into chunks.

Cooking

    Combine Ingredients

    In the same pot, add chopped onion, carrot, and minced garlic. Sauté until softened. Add the soaked beans, chicken stock, white wine, thyme, bay leaves, and the browned meats.

    Simmer

    Bring to a boil, then reduce to a simmer. Cover and cook for about 1.5 to 2 hours, or until beans are tender and the duck is cooked through. Season with salt and black pepper to taste.

    Serve

    Remove the bay leaves before serving. Serve hot, garnished with the crispy bacon.
