    Score the skin of the duck breasts in a crisscross pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

    Smoke the Duck

    In a smoker or stovetop smoking setup, place the cinnamon sticks and smoke the duck breasts over low heat for about 1 hour, or until cooked to your desired level of doneness.

    Thinly slice the red cabbage and toss it with olive oil, salt, and a splash of vinegar. Let it marinate for at least 30 minutes.
