    Prepare the Beans

    Soak the dried cannellini beans in water overnight. Drain and rinse before cooking.

    Cook the Bacon

    In a large pot, cook the smoked bacon or pancetta over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.

    Sauté Vegetables

    In the same pot, add the diced onion, carrot, and celery. Sauté for about 5 minutes until softened. Add the minced garlic and cook for an additional minute.

    Add Beans and Broth

    Stir in the soaked beans, chicken or vegetable broth, white wine, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 1 hour or until the beans are tender.

    Cook the Clams

    Add the cleaned cherry stone clams to the pot, cover, and cook for about 5-7 minutes, or until the clams have opened. Discard any clams that do not open.

    Final Touches

    Stir in the crispy bacon, adjust seasoning with salt and pepper. Garnish with chopped parsley before serving.
